Berry Oat Bars

These yummy treats are super easy and quick to make. They are perfect for a snack on the go or just with a cuppa.


Makes eight bars.


Ingredients :


For the Oat crumble :

120grams of softened butter (flora/plant spread works good to)

90 grams of oats

85 grams of brown sugar ( dark or light)

100 grams of plain flour

2/3 teaspoon of baking powder


For the berry filling:

200 grams of mixed berries (we used frozen)

10 grams of cornflour (add more if you prefer a thicker jam)

34 grams of caster sugar


For the topping

Chopped almonds/hazelnuts and fresh raspberries



Instructions :

  1. Preheat the oven to 180'C and line a bread tin (approx 15cm) with parchment paper.

  2. In a mixing bowl, cream together the butter and sugar. Following that add the oats, flour, and baking powder to form a crumbly mixture.

  3. Put half of the oat mixture into the lined tin and press down into a smooth even layer. Bake for 15 minutes. (It should be a golden brown colour)

  4. While the base layer is baking prepare the berry filling. Add the berries into a small saucepan on medium heat. Add the sugar. cornflour and a tablespoon of water. Allow the berries to simmer for 10 minutes, stirring regularly. Mash the berry mixture slightly with a fork.

  5. Spread the cooked berry mixture onto the cooked base. Put the other half of the oat mix on top. Sprinkle with chopped nuts and fresh raspberries.

  6. Bake for 30 minutes until top layer is golden brown. Allow it to cool for 15 minutes before removing the tin. Cut the oat bake 8 even slices and allow them to cool before serving.
